Ingredients:- 1 cup butter (2 sticks) softened
- 3/4 cup packed brown sugar
- ½ cup granulated sugar
- 2 eggs
- 1 tsp. Vanilla
- 1 tsp. baking soda
- ½ cup Wild Rice flour
- 1 tsp. Cinnamon
- Dash of nutmeg and ground cloves if desired
- ½ tsp. salt
- 1 cup all purpose flour
- 3 cups oatmeal
- ½ cup coconut
- ½ cup chocolate chips
- ½ cup dried cranberries, cherries, or dates
Preheat oven to 350 degrees
Mix butter and sugars until creamy. Add eggs and vanilla and blend well.
Add baking soda, salt and spices along with the Coeur d’Alene Wild Rice Flour and mix well. Add the all purpose flour and oats and blend. Then add the chocolate chips, coconut, and dried fruit and mix well.
On a greased or parchment paper lined cookie sheet drop dough by rounded teaspoon and bake for 8-10 min. Cool one to two min. on the cookie sheet then remove to a wire rack. After cookies are cooled, store in an airtight container.
